Can orange juice and vitamins help cure a productive cough?

Q. I drink lots of orange juice (with Calcium and Vitamin D) and take a vitamin every day, and I have this productive cough. Can these help me get rid of it?

Note: I do not take any OTC medicines, nor do I want to take them anyway.

A. Vitamins are good to take and orange juice is good for you, but there are no real cures for your cough(if it is from viral infection). A productive cough is not necessarily a bad thing in the short term. If it persists for more than a week go see a doc. An expectorant won't do anything for you if it is already productive. That is used to make a dry unproductive cough more watery and productive. If you are annoyed by coughing spells and can't relax the best thing to do is take a cough syrup, but you don't take those. Drink plenty of fluids to keep the cough productive, it should pass. If it doesn't or you start getting any chest pains gp see a doc.

How do you substitute bottled lime juice for fresh lime juice?
Q. How much bottled juice is equal to the juice of one lime? The bottled lime juice doesn't provide any information on how to substitute bottled juice for fresh.

A. About 2 tbsp juice = 1 fresh lime

when lemon juice is added at the beginning of cooking lentils why does it slow the cooking?
Q. why does lemon juice slow the cooking of lentils when added at the beginning? does altering the pH effect the way lentils cook on a molecular level?

A. Boiling points are largely determined by intermolecular (hydrogen bonding and hydrophobic/hydrophilic) interactions. These three functional groups all contain an electron donor (oxygen or nitrogen) with a different willingness to share its electrons and thus a different capacity to hold on to other molecules. The tighter these interactions are, the higher the boiling point will be. The citric acid in Lemon Juice, a weak carboxylic acid, decomposes below boiling point at 175°C while water boils at 100°C.

**NOTE: If you're using a small amount of lemon juice, then it probably is not really effecting the boiling point**

How much orange juice should I drink to bring along my period?
Q. Drinking orange juice is said to make your period come faster, but how much should I drink?
The reason why I asked is because YES my period is late. You don't need to be rude.

A. That's not true.

Vitamin C can induce late periods as it starves the uterus of progesterone - however this would only work if your period was actually due or late, it also requires a high dose...far more vitamin C than you'd get from a few glasses of orange juice. It's really best just to let your period come naturally.

I know that my hair is much softer and has a lot more bounce than normal.

Does anyone have a recipe for roasting a whole turkey from America's Test Kitchen/Cooks Illustrated?
Q. I started subscribing to Cooks Illustrated magazine, but don't have access to the America's Test Kitchen website archive of recipes. The current issue of Cooks Illustrated has a recipe for roasting a turkey breast, but I don't have their recipe for roasting a whole unstuffed turkey. Can anyone please post the recipe for roasting a whole turkey. I've never had a bad recipe from Cooks Illustrated and this will be my first Thanksgiving turkey. Thanks for your time and effort.

A. Here we go--this is from way back in 1993 (issue #5!) This is a great recipe, but I will say that all that turning is unnecessary, in my opinion. It's guaranteed to mess up your clothes and really isn't worth the trouble...but you can decide that for yourself. Brining is definitely the way to go; the turkey stays really juicy and flavorful.

The Best Oven-Roasted Turkey with Giblet Pan Sauce

(Serves 10-12)

--1 turkey (12 to 14 pounds gross weight), rinsed thoroughly, giblets and tail removed
--2 pounds salt
--3 medium onions, chopped coarse
--1 1/2 medium carrots, chopped coarse
--1 1/2 celery stalks, chopped coarse
--6 thyme sprigs
--1 bay leaf
--1 tablespoon butter, melted, plus extra for basting
--3 tablespoons cornstarch

Place turkey in a pot large enough to hold it easily. Pour salt into neck and body cavities; pour salt all over turkey and rub into skin. Add cold water to cover, rubbing bird and stirring water until salt dissolves. Set turkey in refrigerator or other cool location for 4 to 6 hours. Remove turkey from salt water and rinse both cavities and skin under cool running water for several minutes until all traces of salt are gone.

Meanwhile, reserve liver and put giblets, neck and tail piece, 1/2 of the onions, celery, carrots, thyme sprigs, and the bay leaf in a large saucepan. Add 6 cups water and bring to a boil, skimming foam from surface as necessary. Simmer, uncovered, adding liver during last 5 minutes of cooking, for a total of about 1 hour. Strain broth (you should have about 4 1/2 cups); set neck, tail, and giblets aside. Cool to room temperature, and refrigerate until ready to use.

Heat oven to 400 degrees. Toss another 1/3 of onions, carrots, celery and thyme with 1 tablespoon butter and place in body cavity. Bring legs together and perform simple truss [here's what it says to do: Using the center of a 5-foot length of cooking twine, tie the legs together at the ankles. Run the twine around th thighs and under the wings on both sides of the bird, pulling tightly. Keeping the twine pulled snug, tie a firm knot around the excess flesh at the neck of the bird. Snip off excess twine.--These days a lot of turkeys come with a "hock lock" that holds the legs together, so this step may not be necessary.]

Scatter remaining vegetables and thyme over a shallow roasting pan; pour 1 cup reserved broth over vegetables. Put perforated cover on roasting pan; set a V-rack (preferably nonstick) adjusted to widest setting on top of cover. Brush entire breast side of turkey with butter, then place turkey, breast side down, on V-rack. Brush entire back side of turkey with butter.

Roast for 45 minutes. Remove pan from oven (close oven door); baste turkey with butter. With a wad of paper toweling in each hand, turn turkey, leg/thigh side up. If broth has totally evaporated, add an additional 1/2 cup stock to pan. Return turkey to pan and roast 15 minutes. Remove turkey from oven again, baste, and again use paper toweling to turn the other leg/thigh side up; roast until meat thermometer stuck in leg pit registers 165 degrees, about 30 to 45 minutes. Breast should register 160 to 165 as well. Transfer turkey to platter; let rest for 20 to 30 minutes.

Meanwhile, strain pan drippings into a large saucepan (discard solids) and skim fat. Return broiler pan to stove and place over 2 burners set to medium heat. Add 3 cups reserved broth to the broiler pan and, using a wooden spoon, stir to loosen browned bits. When pan juices start to simmer, strain into saucepan along with giblets; bring to boil. Mix cornstarch with 1/2 cup cold water and gradually stir into saucepan. Bring to boil; simmer until sauce thickens slightly. Carve turkey; serve with gravy.

How do you get your creative juices flowing?
Q. Sometimes I'm just stuck in a rut and cooking the same old things, sometimes I just sit and stare at the white paper and can't come up with a drawing, sometimes my days are as boring as wood chips, sometimes I want to bless someone else and I can't think of what to do....I love being creative, but sometimes I just can't get it going and don't know where to get inspiration. I have a ton of magazines to look through, but I don't want to copy other people. I just want my creativity back!

A. If I can't write... I read. If I can't cook... I go out to eat. If I can't draw... I go to an art museum. The intent is not to copy what you see, but immersing yourself in that activity can get your brain focused on the right area. When I read, for example, a single sentence may catch my attention. By the time I've worked it over, fit it into my life, and daydreamed through it, the idea will probably have no relation to what I read, but seeing the words get my words started. I may even flat-out disagree with what I've seen or heard, but that's a starting point, too!

This usually works for me, if not immediately than over time if I'm consistent with spending time on it. At other times in my life, however, I have tried other tactics. I have taken classes to learn more about a subject -- or learned something entirely new. I have traveled to a new city, read a new genre of book, and walked the opposite way around the block. People have a delicate relationship with change -- most of us want the safety of habit, but the excitement of something new (not too new!). If we're in a rut and haven't found the right balance of old and new, any little push can get us re-started. And if we're in a state of excitement, inspiration often follows!

As a last thought, keep a journal. Record what you've eaten and what you crave, or sketch something every day. As a writer, the experts say that it's okay to just write "I have nothing to write" repeatedly until something else comes. As an artist, I'd probably just doodle a progression of stick people on the exciting-as-mud days. The point is just to keep doing the activity, have patience, and try not to be too hard on yourself! Inspiration is a tricksy, flighty, wild-and-free kind of thing, so you have to use sneaky skills to grab it.

Good luck finding that creativity! I hope something in here helps get you started!

I saw an article on inorganic arsenic in fruits in the Consumer Report Magazine?

Q. Was Ocean spray Cranberry juice mentioned as having too much Arsenic in it? Is it possible without signing up with Consumer Report to get a copy of that article?

A. Two options. If you can find the article on line, then copy it to your computer. If not, go to the library, find the article in the magazine and make a photocopy. I have no idea about Ocean Spray although you might find a response to the accusation at their web site.

Arsenic is an atom and a toxic metal. Since it is not a compound and does not contain carbon, of course it is non-organic. This knowledge is one of those hidden gems that was shared in Chemistry class and which everybody decided to forget so they could invent a new meaning for organic.

What's the difference between fresh-pressed and aged noni juice?

Q. I am interested in 100% pure Noni juice, not the watered down Multi-level marketing (MLM) version. I am not sure what the difference in the two types of the pure stuff.

A. I found a web site that explains the differnce between the two types (fresh and aged) of Noni juice.

http://www.trunoni.com/11_fermented_noni_juice.htm

What's the difference between Tru Noni and Tahitian Noni juice?
Q. I have heard through friends how great Noni juice is to help maintain a healthy immune system. I am confused between Tru Noni juice from Hawaii and Tahitian Noni juice. Is there a difference besides the price? The Tahitian Noni is twice the price.

A. I am not sure if I would go as far as calling Noni juice as a whole a scam, maybe Adam experienced what most Multi-level marketing or Network marketing folks feel after realizing the dream they were sold by a MLM distributor never happened for him.

"Is a dream a lie if it don't come true, or is it something worse?" (b.Springsteen).

The power behind Noni juice isn't the antioxidants, but is found in the unique combination of polysaccharides and other bio-active ingredients. Polysaccharides have been shown in clinical studies to boost the immune system, something grape juice can't do. Fruits and vegetables, depending on the soil they grow in, offer the human body that extra electron to the free radical, thus classifying it as an antioxidant. The problem is the body can absorb only a small amount and than passes the rest out as waste.

Back to your important question. The geographical location, Hawaii or Tahiti isn't what's important as long as it's pure juice and doesn't have other fillers added to cut the amount of Morindia citrifolia (Noni) in each serving. The brand name TAHITIAN NONI does add a lot of other stuff to their bottle other then Noni juice (grape and blueberry concentrate) hence the bluish purple color.

What is the best Noni juice product on the market?
Q. I want to buy Noni juice because I have heard so many great benefits from it, but there seems to be so many Noni products.

Which product is the best and why?

A. The best Noni juice I have found on the Internet is Tru Noni juice from Hawaii. The reasons are threefold:

 It's 100% pure Noni juice
It comes in a 32 ounce glass bottle
Tru Noni is the lowest priced Noni juice I have found anywhere.

"S V" gives a link to an article that was written about TAHITIAN NONI INTERNATIONAL product and many of their false claims TNI distributors have made through their inception. I can only say that Noni juice has helped me and my family with health issues.

"electra" makes a very good point about buying Noni juice that is organic, but you should make sure the Noni product you buy is pure. Otherwise you will fall victim to companies like "Argo Labs" that "goteated" mentioned that is mostly water.

I recommend you visit: http://www.trunoni.com/still_not_sure.htm

Even though the information in on Tru Noni's Web site, it seemed to be unbiased and will give you an overview of the price and purity of Noni juice.

What is the Best Noni juice for my money?
Q. So many choices in the world of Noni juice on the Internet and in the stores. Which brand has the best product to spend my hard earned money on?

A. For your money you won't find it with any of the Multi-Level- Marketing (pyramid schemes) products like Mona Vie (mentioned here) or TAHITIAN NONI INTERNATIONAL, XANGO or any of the other products that are insanely high priced, but when you read the ingredients are cut with water and other less expensive ingredients.

The reason is companies that sell products through MLM networks have to make the product as cheap as possible and sell it at the highest price to pay the multiple levels of distributors who want to get rich off you. Very few really do :0(

The best Noni product that I have found is from True Noni and I have bought many of the other Noni products until I found this product on the Internet. I like Tru Noni because it is pure and the price is right. The taste is harsh, but I found I got the best results drinking pure Noni juice, and you do get use to the taste.

Does mango juice help your stomach in any way?

Q. I'm i sixth grade and I have this terrible stomach ache. My mom had to go to work for an hour and I really want to drink some mango juice on the kitchen counter. I really want an excuse for drinking it,so does mango juice help your stomach feel better in any way?

Thanks in advance!

A. no. just drink it.
Papaya juice is the one that's good for your digestion. Not mango.

"Julie bought a new juice maker machine and has been making carrot and mango juice, which she drinks 2 or 3 ti?
Q. Julie bought a new juice maker machine and has been making carrot and mango juice, which she drinks 2 or 3 times daily. She has noticed recently that the palms of her hands are turning orange. What is likely causing this? Is she at risk of vitamin toxicity?

A. Its most likly the carrots. Eating too many carrots, or other foods high in beta-carotene, can cause a condition called carotenemia. High levels of beta-carotene can cause a yellowish discoloration of the skin, most noticeable on the palms and soles. It is not toxic and generally does not cause other health problems.

Stop eating so meny carrots and it will go away after a while. But don't switch the carrots for tomatos because they do the same thing.

Can i give my iguanas or my bearded dragons Mango Juice instead of water?
Q. not as a daily drink, but every now and then, like a treat.
because i asked my mom to get me mangoes and she got me two mangoes, AND mango juice. and i just tried some and it was delicious!!! but i have a whole carton of it and i know mangoes are good for both iggies and beardies so i wanna share some of it with them. :)

Thanks so much! and best answer gets the points!

A. your bearded dragon would probably love it although they don't tend to drink from a bowl, but you're iguana shouldn't have a lot of fruit as it will play it's stomach up, so only a bit! x

do u have a recipe for watermelon cake. i heard it was in a jet or ebony magazine?
Q. i have no specifics, i am a cook for my church and a fellow ask me if i tried the watermelon cake the was featured in a jet or ebony magazine this summer. i just wanted to know if there was such a recipe.

A. Make a big hit with both kids and adults by using watermelon in a bundt cake. Use miniature chocolate chips to simulate watermelon seeds, if you wish. You can make this cake in a sheet pan, but reduce the baking time accordingly.

INGREDIENTS:
1 (2-layer package) white cake mix
1 small package mixed fruit gelatin powder
1-1/3 cups seedless watermelon cut from the center and cubed into 1-inch blocks
3 egg whites
1 Tbsp vegetable oil
1 cup miniature chocolate chips, optional
.
Frosting:
1/4 cup watermelon juice
1/2 cup butter, at room temperature
2 cups powdered sugar
2 (3-ounce) packages cream cheese, at room temperature
2 to 3 drops red food coloring, optional
1/8 cup miniature chocolate chips, optional

PREPARATION:
Preheat oven to 350 F. Grease and flour a bundt cake pan (or 9 x 13-inch cake pan).

In a medium bowl, whisk together cake mix and gelatin powder until combined. Set aside.

In a large bowl, beat watermelon, egg whites, and vegetable oil until smooth. Add dry ingredients, half at a time, and mix until well-blended. Fold in chocolate chips, if using.

Pour into prepared pan and bake about 35 minutes until toothpick inserted into the center comes out clean. Cool to room temperature before frosting.

For the frosting, blend watermelon juice, butter, powdered sugar, and cream cheese until combined and fluffy. Add food coloring to achieve a rosy watermelon color. Frost cooled cake. Place chocolate chips sporadically around the cake to simulate seeds. Refrigerate to set frosting. Remove from refrigerator at least 30 minutes before serving.

Yield: about 12 servings

It is good; I got this recipe from "Home Cooking by Peggy Trowbridge" on www.about.com

Hope this helps

Is there juice you can buy from the store that is as good as juicing yourself at home?

Q. I've heard the benefits of juicing are great. I want something I can just grab and go with.

A. Look for juices with sediment. Pretty much the easiest rule to remember. That means the juice was juiced and bottled, and usually doesn't come from concentrate. The Simply juices are probably the most widely available ones that are just squeezed oranges, or pressed apples, or lemon juice sugar and water, and aren't from concentrate. Odwalla juices I think are basically freshly squeezed, but to be honest I've never tried one I liked.

Also, if you like apple juice, get apple cider instead. Not the kind that has alcohol in it, obviously, it's just apple juice that hasn't been filtered to remove all the sediment at the bottom. That sediment has good stuff in it.

How long does fresh juice keep its vitamin and mineral content?
Q. I recently started juicing. My question is how long does the fresh juice keep its vitamins and minerals intact. Must I drink it immediately or can I keep it for a day or two?

A. Depends on the juice. Wheat-grass is supposed to be drunk immediately, while others seem to keep well in the fridge.

You would probably have to look it up on google for specific juices.

How long does home made juice keeps?
Q. I have started juicing at home, but just the quantity that will be consumed immediately.
Does anyone know if I can make a whole batch for two of three days and keep it in the fridge?
Does it keep? Or it defeats the whole purpose?
fruit or / and vegetable.

A. The enzymes in the juice will break down very quickly, losing vitamins and taste. I have juices for years, and have learned that juice must be consumed within 15 minutes of juicing, or it gets slimy. If you are doing a single veg or fruit, such as carrot or apple, it will keep for the day if you add a squeeze of fresh lemon or lime, but the quality deteriorates. Those enzymes work fast! It breaks down to quickly to save.

What is a good juicing recipe and how often do I drink them?
Q. Ive recently read the health benefits of juicing and I would like to try it. Ive seen juice fasting but mostly looking for the health benefits and weight loss. Any recipies or directions would be appreciated

A. I'm glad you started juicing. My spouse and I started after watching a documentary about it. We too didn't see the need to do a fast per say, but have found that replacing 1 meal a day with a juice to be not only very enjoyable but also very rewarding health-wise. Check out juicingpedia.com for some tasty and healthy juice recipes. I've found that my skin health has improved since beginning juicing. We don't often think about our skin as a body organ, but it is actually the largest organ we have. Juicing has certainly helped me consume adequate amounts of Vit A, C and E to keep my largest and most visible organ healthy.

How to make calamansi juice concentrate and how to preserve it?
Q. How to make juice concentrate and how to preserve it?
I have quite some calamansi (very small lemons). I'd like to make some sweetened concentrate ( for making lemonade later ) and unsweetened concentrate or unsweetened juice for cooking. How to make this and how to preserve it? Could we keep it in 300ml plastic bottles?

A. Squeeze the juice from the calamansi and mix with sugar. After which, refrigerate. Do not put water in the mixture. When you want calamansi juice drink, that is the only time you get some of the concentrate and mix with ice cold water and sugar to sweeten it. Do not use hot water for it will kill the vitamin content of the juice.

What is a Good Noni Juice brand?

Q. I am looking for a Noni juice product that is better than TAHITIAN NONI INTERNATIONAL's version. I really would like to find a good 100% pure version that isn't sold through Network Marketing.

A. Tru Noni from Hawaii. 100% pure Noni juice is a better value for your money and health.

What is a Good Noni Juice brand?
Q. I am looking for a Noni juice product that is better than TAHITIAN NONI INTERNATIONAL's version. I really would like to find a good 100% pure version that isn't sold through Network Marketing.

A. Tru Noni from Hawaii is the best.

I bought and drank Tahitian Noni International's juice for about 5 years before switching over to the pure Noni juice last year. I felt the difference almost immediately after drinking pure Noni rather than the processed version TNI sells by adding sugar concentrates and water.

Does it matter if I drink noni juice or take the capsules?
Q. Also, what brand of Noni works best. I bought Tahiti Noni Juice at the Health food store it was $45.00 for 32oz. I can't afford that I was told my my natural doctor to take 2 oz in the morning and 2oz at night any suggestions? I suffer from Anxiety!! !

A. Hi!

I suggest you try goji berry juice. It's 100% all natural, no over dose, no side effects, and taste so good! It's not herbal (like roots, leaves, seeds, rind, etc.) compared to noni, but a juice (like apple or orange juice).

Noni fruit is herbal, hence not a natural food for man (do you now have a hint now why they made noni into capsules?). Second, it takes a lot of noni for you to consume before you feel the desired effects. I have nothing against noni but basing from my personal experience with noni (plus my family's), I highly recommend you try goji juice to believe. And one more thing - there's a 90 day money back guarantee, so it's absolutely risk free!

Hope this will help you.

Edwin

What are your thoughts on Noni juice?
Q. I was on the Noni juice regiment for a year, I even stopped drinking coffee while on it. I am considering going back to drinking Noni juice again...what are the thoughts about this miracle tonic? All medical, homeopathic, or just plain experience, welcomed. Also, I am planning on conceiving by end of year, any conflict with the Noni juice and pregnancy? Thank you all in advance for your responses!

A. It's not the best tasting juice (which is why it's commonly with other juices).... but it's a VERY good antioxidant and is a good general health tonic than can help to boost your immune system.

As far as the pregnancy issue, there are no warnings about Noni and pregnancy (which is normal for most fruits), so it should be no problem.

Does anyone have any good juice recipes?

Q. I just bought a juicer so I can make my own fruit and vegetable juices at home.

I have had a heart attack and have COPD. I'm supposed to be eating a lot of fresh fruits and veggies, but just can't eat that amount on a daily basis, but can still get the vitamins etc. through fresh juice.

Does anyone have some juice recipes they would be willing to share?

A. Here's a site I bookmark and follow closely. Lots of interesting ideas there.

Nutrients, vitamin and enzymes are delivered to your body very quickly when you drink a glass of fruit and vegetable juices. Your are on the right track, Toby.

I need some juice recipes that I can do in my blender.?
Q. Any kind of juice recipe would be helpful.

A. Your favorite fruit, milk & ice. You may have to add a small spoonful of sugar or sweetner if the fruit isn't sweet. OR Your favorite fruit, juice & Ice. The best juice to use is those fruitt blends...like orange, cran, grape or whatever the mixure. ALWAYs add a banana. The banana makes the drink SMOOTH..like a smoothy and thickens it a little. You will notice the differnece if you make a drink without it. My fav or a banana, a couple of strawberries, some ice, packet of sweet-n-low and milk or juice. I make this as a breakfast drink for the kids and my self in the mornings. It's better than a SlimFast.

Does anyone have the detox juice diet recipes that were in Women's World magazine in Summer of 2008?
Q. The article was about losing 30 pounds in 2 weeks. There were about six different juice recipes to make.

A. Hi Erose

I'm afraid I don't have those recipes but I just wanted to say that if you are serious about losing weight you do need much more than just recipes.

You really need to follow a plan which will take into account every aspect of detoxing.

One thing I would say is that 30lbs in 2 weeks is a bit extreme, that's over 2lbs a day every day for 14 days, and realistically that's not going to happen without making you feel ill. I would set a target of 1llb per day and you would lose the 30 lbs in 1 month, which is pretty good!

Detoxing is not easy and to go back to what I said before, if you follow a plan you are much more likely to succeed. There are some good programs online which are for people who want to detox and lose weight at the same time.

I know some of these can be purchased for less than 40 bucks so my advice to you is to do that then follow the program to the letter and I'll bet you will have lost your 30 lbs in 1 month or less and feel a whole lot healthier!

Best of luck!

Kezzy

What are the best juicer recipes to combat cancer?
Q. Someone dear to me has cancer and she has a fruit and vegetable juicer. What juice recipes would you recommend?

A. There is no scientific evidence that any food or drink, including juice, has any effect on the progress of cancer.

I have been an enthusiastic juicer for years; my high intake of juices did not prevent me from getting cancer, nor did it cure me. Juice always made me feel better, except when I forced myself to drink it during chemo, when it made me very nauseous.

I'm sorry about your loved one having cancer, and hope her treatment goes well.

do u have a recipe for watermelon cake. i heard it was in a jet or ebony magazine?

Q. i have no specifics, i am a cook for my church and a fellow ask me if i tried the watermelon cake the was featured in a jet or ebony magazine this summer. i just wanted to know if there was such a recipe.

I am planning to use lime juice to lighten my hair, how will it work?
Q. today i mixed 1tablespoon line juice with coconut oil and planning to keep it over night. If i do it 2/3 times a week, will my hair lighten in 2 weeks?

I have dark brown hair.

A. i have done this before, just used straight up lemon juice instead. you have to sit out in the sun. i did this for 2-3 months and it was dark brown to begin with, ended up with a medium brown color like her highlight color: http://www.style-hair-magazine.com/images/long-straight-brunette-rachel-24553.jpg

What does washing your hair with black tea do?
Q. I read in a magazine that washing brown hair with black tea get rid of unwanted colors and produces shine. But the article was very vague, has anyone tried this?

A. I have dark brown hair and I just did a black tea rinse for the first time this morning. I mixed it with lemon juice though because I didn't want my hair to get too black, I want it to remain brown. But, I have read that it can darken your hair. I know that my hair is much softer and has a lot more bounce than normal.

How much lemon juice should be added to a gallon of water to prevent browning of potatoes?
Q. How much lemon juice should be added to a gallon of water to prevent browning of potatoes? Thanks for your help!

A. Browning in potatoes, bananas, apples, mushrooms and many other fruits and veggies are caused by enzymes called polyphenoloxidase. Keeping potatoes submerged in water will work for a while as it greatly lessens the available amount of oxygen the enzymes require to cause browning, however it will not eliminate the browning process altogether.

Lemon juice works great for preventing enzymatic browning of apples, pears and bananas, as it actually kills the enzymes by altering the ph level on the surface of the fruit. While submerging potatoes in water will greatly reduce enzymatic browning, the potatoes still yellow a little bit. Peel a fresh potato and compare it to one soaked in water overnight and you will see the soaked potato has indeed darkened slightly. If you want to prevent the discoloration entirely, you can dissolve 2 TBL of salt per gallon of water and this will keep your potatoes nice and white. Remember to rinse the potatoes before using them.
